New Black Truffle Cheese From Flat Creek Lodge
Creamy, luxurious — and laced with the gentle hint of black truffle. Wow, what a great cheese. Wendy and Sarah from Thrive! cafe on Whitemarsh Island sampled me on this cheese last week at the Trustee’s Garden Farmer’s Market and I score it another “10″ from this Swainsboro, Georgia, artisan cheese maker.
The cheese would layer beautifully with other savory flavor, but I’m thinking I will enjoy mine on a slightly crisp slice of baguette with a glass of earthy Coteaux du Languedoc 2005 Domaine d’Aupilhac “Lou Maset.”
This farm-style wine from the value laden Languedoc is teeming with flavor and Mediterranean influence — what a great cookout wine. I experienced the wine last week during a dinner at Elizabeth on 37th that showcased a variety of wines from importer Kermit Lynch.
Chef Kelley Yambor paired the wine with a pretty trio of round Wild Mushroom and Manchego Cheese Ravioli with Steamed Leeks in Wild Mushroom Broth.
