I was on hand thanks to Ben Tally and Associates, the distributor of Swiss Diamond cookware. The hour-long demo was designed to show off the durability, even heat conductivity and versatility of this cookware. The diamond impregnated surface browns foods, makes great sauces and even allows creation of "fond," the delicious brown bits left over from saute or frying.]]></description>

I prepared Chicken Breast Stuffed with Prosciutto and Swiss Cheese, accompanied by Rosti Potatoes with Gruyere Cheese and Pan-Seared Pork Medallions finished with Madeira Sauce and accompanied by Tomato and Peach Compote.<br />
