Chef Herve and Ann Marie Apgar have opened Papilotte, a French cuisine-to-go restaurant in downtown Savannah.

The restaurant features an amazing array of French-inspired items like tartines, fresh soups and a baked goods case that’s brimming with delicious treats.

On my recent visit, I tried a lump crab tartine, fresh fruit salad in light ginger syrup and lip-smacked my way through a wonderfully buttery and crumbly wedge of gateau breton. Everything was fresh, flavorful and a welcome step away from the usual.

A communal table offers limited seating; beverages are bottled or canned from a chilled case. Expect the little eatery to soon have a small selection of wine. Gift baskets and gift certificates are available.

Tuesday-Saturday 10 a.m.-7 p.m.; Sunday noon-5 p.m.

218 W. Broughton St., 912.232.1881

So, as people sometimes do in the middle of their careers, we bailed out of conventional dairying to pursue a better way to farm.

“Our cows no longer live in barns on concrete. They live outdoors, get exercise, and enjoy grazing lush pastures just as cows on farms are supposed to. We maintain sustainable, biological farming practices that always nourish the soil life first

A small-scale cheese operation started in 1988 in response to a growing demand for domestic goat cheeses and as a means to utilize seasonal excesses of milk. Split Creek Farm’s certified goat herd produces all the milk used for its cheese and fudge. Every animal in the herd receives individual attention daily. The extra care they receive shows in the milk quality. The dairy goat herd, which is mostly Nubian, competes nationally in the show ring and for milk production records. Herd health and the ultimate quality of the dairy products are the primary concern of the owners.
